Place a 12-inch cast-iron skillet over medium-low heat.<\/div>\n<\/td>\n<\/tr>\n<tr>\n<td class=\"directions-text-box-even\">\n<div class=\"directions-text-even\"><span class=\"directions-step\">2.<\/span> <span class=\"directions-label\">Peel the Potatoes: <\/span>Peel the potatoes and slice lengthwise as thin as possible; 1\/16 inch is ideal.<\/div>\n<\/td>\n<\/tr>\n<tr>\n<td class=\"directions-text-box\">\n<div class=\"directions-text\">\n<p><span class=\"directions-step\">3.<\/span> <span class=\"directions-label\">Start building the pie: <\/span>Spray the bottom and the sides of the hot skillet with the vegetable oil cooking spray. Cover the bottom and the sides with \u00bc of potatoes in a single layer.<\/p>\n<p>Sprinkle the potatoes with \u2153 of Parmesan cheese, butter, shallots, chives, garlic, salt and pepper. Cover with another layer of the potatoes, leaving no gaps. Add another layer of cheese, butter, and seasonings. Follow this with a layer of potatoes, then cheese, butter, and seasonings, and finally potatoes.<\/p>\n<\/div>\n<\/td>\n<\/tr>\n<tr>\n<td class=\"directions-text-box-even\">\n<div class=\"directions-text-even\">\n<p><span class=\"directions-step\">4.<\/span> <span class=\"directions-label\">Bake the pie: <\/span>Spray the top layer with vegetable oil coking spray. Bake for 40 to 50 minutes, or until the top is browned and crisp.<\/p>\n<p>Remove the skillet from the oven and let the potatoes stand for 10 minutes. Carefully invert the potato cake onto a large serving plate.
