- Rice-Cream
- 1 ½ cups water
- ¼ teaspoon salt
- 1 cup short-grain white rice
- 2 cups milk
- 1 cup heavy cream
- ¼ cup sugar
- 1 teaspoon pure vanilla extract
- Strawberry Sauce
- 1 cup strawberry preserves
- ½ cup water
- 1 teaspoon lemon juice, freshly squeezed
This traditional sweet ending to the meal is a favorite at Restaurant Akershus in the Norway pavilion; the restaurant is patterned after Oslo's Akershus castle, from the fourteenth century.

1. In a 3- or 4-quart saucepan, bring 1 1/2 cups of water to a boil with the salt. Add rice, reduce the heat to medium-low, and cook rice for 15 minutes, or until all of the water has been absorbed. |
2. Add milk and simmer for 20 minutes, or until all the milk has been absorbed. Transfer the mixture to a bowl and let cool to room temperature. |
3. Meanwhile, in a blender, combine strawberry preserves, the 1/2 cup of water, and lemon juice and blend until smooth |
4. In a bowl, whip the cream with the sugar and vanilla. With a rubber spatula, fold the whipped cream mixture into the rice. |
5. To serve, transfer the Rice-Cream to a large bowl or to individual serving bowls, and drizzle with the Strawberry Sauce. |
