This traditional sweet ending to the meal is a favorite at Restaurant Akershus in the Norway pavilion; the restaurant is patterned after Oslo's Akershus castle, from the fourteenth century.

ingredients

  • Rice-Cream
    • 1 ½ cups water
    • ¼ teaspoon salt
    • 1 cup short-grain white rice
    • 2 cups milk
    • 1 cup heavy cream
    • ¼ cup sugar
    • 1 teaspoon pure vanilla extract
  • Strawberry Sauce
    • 1 cup strawberry preserves
    • ½ cup water
    • 1 teaspoon lemon juice, freshly squeezed

directions

1. In a 3- or 4-quart saucepan, bring 1 1/2 cups of water to a boil with the salt. Add rice, reduce the heat to medium-low, and cook rice for 15 minutes, or until all of the water has been absorbed.
2. Add milk and simmer for 20 minutes, or until all the milk has been absorbed. Transfer the mixture to a bowl and let cool to room temperature.
3. Meanwhile, in a blender, combine strawberry preserves, the 1/2 cup of water, and lemon juice and blend until smooth
4. In a bowl, whip the cream with the sugar and vanilla. With a rubber spatula, fold the whipped cream mixture into the rice.
5. To serve, transfer the Rice-Cream to a large bowl or to individual serving bowls, and drizzle with the Strawberry Sauce.
