Cinderella's Royal Table in Cinderella Castle serves this light and easy-to-make sorbet. Up the castle's winding staircase, the restaurant is elaborately designed and features servers dressed in Renaissance-style finery. Cinderella is often there, along with other Disney characters.

ingredients

  • 4 mangoes, peeled, seeded, and chopped
  • ½ cup water
  • 2 tablespoons light corn syrup
  • 2 tablespoons sugar

directions

1. Puree the mango in a blender or food processor - you should get about 3 cups.
2. In a bowl, stir together the mango, water, light corn syrup, and sugar until the mixture is smooth and the sugar has dissolved.
3. Chill the mixture, covered, about 2 hours, until cold
4. Freeze in an ice-cream freezer according to manufacturer's directions. Store tightly packed and covered in the freezer compartment of refrigerator until ready to serve

Notes

Cooks' notes:
When working with mangoes, wash the outsides well. Some people are sensitive to the skin. Wearing gloves, cut around the cling pit and remove the skin.


What to drink:
Wine is not always a good match for ice cream; however, the chef recommends Asti Spumante, a sweet sparkling wine, as "a simple combination that works"
