  • ½ cup butter
  • 1 ½ cups all-purpose flour
  • ¾ cup sugar
  • 1 egg
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup coconut
  • Toasted Coconut
  • Pink Frosting
    • 2 cups powdered sugar, sifted
    • red food coloring
    • 2 tablespoons milk

directions

1. In a large mixing bowl beat the butter with an electric mixer on medium to high speed about 30 seconds or till softened. Add half of the flour to the margarine. Then add the sugar, egg, milk, and vanilla. Beat till thoroughly combined, scraping the sides of bowl occasionally. Then beat or stir in the remaining flour. Stir in the 1 cup coconut.
2. Drop dough by rounded teaspoons 2 inches apart onto ungreased cookie sheets. Bake in a 375 degree oven for 8 to 10 minutes or till edges are firm and bottoms are lightly browned. Remove cookies and cool on wire racks. Spread Pink Frosting on top of cookies, Sprinkle with toasted coconut.
3. Pink Frosting: Combine 2 cups sifted powdered sugar, a few drops red food coloring, and enough milk (1 to 2 tablespoons) to make frosting of spreading consistency.
